Happiness is a Big Yellow Dog - A guest post by Denise

A couple of years ago, my husband and I were struggling financially. Like many people, major reductions in income had caused problems and we were juggling bills. Having never been in this situation before, and searching diligently for employment for nearly a year, I had fallen into a hopeless state of mind, which I now recognize as major depression.

Our family's dog had died the year before, and I missed her desperately. She had grown up with our kids, who were now grown and out of the house (adding empty nest syndrome to things weighing on my mind) and been the perfect dog. A chow and collie mix, she was protective of the kids and I and the perfect watchdog, she never chewed a thing in the house or had accidents. We’d had a yellow lab visit us when we grilled burgers on the deck of our house, and she was the sweetest and most gentle dog I’d ever met. She lived on the next street, and when they found out how she was escaping from the yard, they put a stop to her visits.

Realizing that I needed help to bounce back from this dark place, my husband found an ad for yellow Labrador retriever puppies online. When the local breeder put the ad online for these last two “clearance” puppies, it seemed like the time was perfect. My daughter and I drove to the breeder’s and had the most awful time deciding between these two sweet puppies. The one we picked in the end was the adventurous one who seemed to get into everything. I often regret not taking them both home with me.

Within a few hours, I was totally in love with this adorable little fellow, and everything he did amused me—even when he chewed up my new shoes and my eyeglasses. He had a hard time conquering all the steps in our house the first day, but by the second or third day, he was racing up and down them, circling the kitchen island at high speed, and pouncing on Daddy while he sat in his recliner watching TV. He chased his squeaky ball and skidded across the hardwood floors. We started taking walks together and frequenting the doggie parks in the area, which forced me to get out of the house and socialize with other people. Everywhere we went, people made a big fuss over what a pretty dog he is, and people want to meet him. Drive thru windows became fun as he waited excitedly but patiently for a biscuit or ice cream pup cup from Dairy Queen. Because he’s a lab, he loves the water, and we’ve driven to Florida each winter since he came into our lives, and the three of us swim and have a great time together. Last week, a lady was fishing near the doggie beach and casted out a red and white bobber shaped like a ball, and he “retrieved” it for her. He was interested in the puffer fish she caught, too.

I used to laugh at people who treated their dogs like their children, but now I fully understand it. He is like our baby and we spoil him rotten. When one of us is not feeling well, he lies by our side and puts his head on our shoulder or our belly. He sits on the sofa and watches TV with his head in my lap (but never in the middle, he likes the end seats.) He goes in the car with us wherever we go, and if we both go in the store, he guards the car for us. He stays home only rarely, and when we come home, he is thrilled to see us. What more could you ask for from your best friend?

The 10 Most Romantic Valentine’s Day Foods

We all know that music is the food of love. Crank up the playlist of your favorite yummy, romantic pop confections (I recommend 311’s “Peaches and Cream”) as you savor this list of the other foods of love.

1. Chocolate. This classic is a favorite for its nostalgic value, reminding many of the candy passed out on childhood Valentine’s Days. We also love chocolate for biochemical reasons. According to intimacy expert Dr. Dorree Lynn, it’s the seratonin in chocolate that gives us such pleasurable feelings. For an extra kick, try chocolates that contain red peppers, like Lindt’s Chili Noir dark chocolate bars. They have trace amounts of capsaicin, which causes the body to release endorphins, also a feel-good chemical.

2. Raw honey. More than simply a sweet food, golden honey is a symbol of the sweetness of life…and love. The ancient Egyptians initiated the practice of celebrating a marriage with honey foods - allegedly the basis of the word “honeymoon.” Raw honey also puts a little extra spring in your step; it contains B complex vitamins that are a good source of energy.

3. Strawberries. An American Indian legend tells of how the first man won over the first woman when she slowed down long enough to eat some strawberries. They’d been specially designed by the Great Spirit to resemble the human heart, thus touching the woman’s emotions. Its heart shape and color make the strawberry the perfect Valentine’s Day food. Bonus: For all you candy-cravers, the Just Born company makes heart-shaped marshmallow Peeps candy in strawberry crème flavor for Valentine’s Day.

4. Mangoes. A ripe mango comes in beautiful colors, shades of tropical red, orange, green and yellow. Its juicy texture and powerful flavor make it a fruit-lover’s favorite. Removing the pit can be messy, so sharing a mango is a great activity for a two-person bathtub.

5. Animal crackers. The romance of this childhood favorite dates back to the 1998 film Armageddon. When Ben Affleck’s character used little animal-shaped cookies to seduce Liv Tyler’s character, the animal cracker grew up. Zoo critters crawling across your loved one’s skin are a playful way to initiate contact.

6. Vanilla. “Vanilla” may be used a synonym for bland or commonplace, but the skinny black bean’s homeland is the exotic isle of Madagascar. Its ability to complement other flavors make it a great ingredient in everything from cupcake icing to vodka. Like chocolate or honey, vanilla foods symbolize sweetness. And yes, vanilla crème is the other flavor in which you can find Just Born’s Valentine’s Day Peeps.

7. Sushi. You don’t have to strip down and wear it like Sex and the City’s Samantha to appreciate the art and craft of this fresh-tasting, handmade food. Not a fan of seafood? Many varieties of sushi are vegetarian or vegan.

8. Pomegranate. Another messy fruit that can be fun in the bathtub, the pomegranate plays a role in one of the great love stories of ancient Greece. When Zeus arranged a marriage between Hades, the god of the Underworld, and Persephone, the goddess of springtime, Persephone was miserable. That is, until she ate the seeds of a pomegranate Hades offered her. She fell in love and went on to become the powerful queen of the Underworld, the one to whom the ancients prayed for the salvation of their souls. 9. Cinnamon. The smell of cinnamon is inviting, making many people feel relaxed, comfortable and at home. Of the many foods that cinnamon complements, perhaps the most inviting is the cinnamon bun. Relatively quick and easy to make, cinnamon buns baking in the oven create an atmosphere of romance.

10. Bread. Like cinnamon, warm bread is a homey comfort food. Whether handmade or artisan bread from a bakery, small loaves are perfect for a couple to share with a little butter or olive oil for dipping. After all, it was about bread and love that the poet Omar Khayyam wrote, in Edward Fitzgerald’s famous 1859 translation:

“A Book of Verses underneath the Bough,

A Jug of Wine, a Loaf of Bread--and Thou,

Beside me singing in the Wilderness--

Oh, Wilderness were Paradise enow!”

Valentine’s Day is coming right up. Will you be spending another one alone?

Dating can turn into hard work, and there are times when finding one more new person to go out with may not be the answer. Could it be that you have lost your faith in love altogether? If so, one more date with the wrong “Mr. Right” is no solution.

Wouldn’t it feel great to renew your faith in love? Would you like to learn some new techniques to help you forgive yourself for past mistakes, and then change your perspective on the kind of love you wish to find now?

Most of us start out believing that love can transform our lonely existence into something better. When that doesn’t work out as hoped for or planned, do we dare dream again?

I say YES! Let’s face it, we have all had our share of disappointing and disillusioning relationships. We’ve all been traumatized by love. Our faith can run pretty thin at times. How do we get past early disillusioning experiences that stand solidly in our path to ever believing in love again?

I battled this demon five years ago, and I won this time! Now I wish to share all that I have learned with you. Memories Make Me Happy! A Guest Post by Laura Hughes

When I think of my friends and loved ones I remember stories. I take a lot of pictures throughout the year, pictures of events and places I want to remember. Every time I look at my pictures, I remember stories surrounding the event. Memories make me happy!

Valentine's Day is the perfect time for memories and sharing stories!

I have begun chronicling my memories surrounding my favorite pictures. At first, writing my memories seemed awkward, but over time it has gotten much easier. And I've learned that a heartfelt memory is the very best gift I can give. A tangible reminder to be cherished in days, weeks, and years to come. A written memory to leave to future generations that the people in my life were special, were loved.

My challenge to you this year: A hand-written memory of a special time. This task may seem daunting. “I'm not a writer. I'm not a good speller. I don't know where to begin. This is stupid.”

Start slow. Get a piece of paper, a pen or pencil, a small timer. Set the timer for 2 minutes. At the top of your paper write I REMEMBER... start the timer and write a list of memories. Write the entire time... write just enough to recall the memory then move on to the next memory. When the buzzer sounds, stop.

For example: I REMEMBER our first kayak trip down the Muskegon River... meeting you at the ball park... “Here, let me help you”... cooking my first ham... meeting your brothers at your family reunion... honking the horn in the driveway... our first big garden... Sport and RV shows... road trip in Florida... driving into the Grand Canyon a little too far... proposal... wedding ceremony... last-minute Mackinac Island biking... hot dogs over brush pile... fishing in little row boat... (each time you do this activity you will generate a different list!)

Pick one of your listed memories and start telling the story. Don't worry if it's not a literary masterpiece. It will  be to your loved one. The story will show how much your loved one means to you. You remembered. If you  have a picture of the memory all the better. If not, no worries. Your sentiment is enough.

This activity can become a family tradition. Everyone can participate. Group memories are special, too. We have started making a giant card for those holidays when family members gather. For example, at Christmas, we make a blank card, put a title on it (What I remember about Christmas... Remember the 4th of July we... My favorite Thanksgiving dessert is... etc.) pass it around during the day and everybody signs it and adds their memory. The following year, we do the same thing with a different title and we have all prior cards displayed throughout the house. We all look forward to re-living memories past.

Write from your heart; it's Valentine's Day, after all!

How to make your Girl Happy on Valentine’s

Valentine’s Day is probably one of the special days in a year that automatically needs to be celebrated. Love should be felt in the air – it is the perfect season when lovers can show their affection to one another in a way that’s beyond the usual. And there’s no better way to be more romantic than to give our special one a remembrance of the special day, right?  

The concept of giving gifts on Valentine’s may sound easy; finding the perfect gift for our love ones is the hard part. But to have an idea of the most appropriate gifts we can give our partners this season, here are a few ideas to consider when looking for the perfect gift for a woman: 

Girl You’re Dating 
      Women are by nature easy to sweep off their feet. It would be okay to assume that anything can make them happy. One thing guys should consider though is the fact that girls would only be happy with ‘anything’ IF she’s into the guy too. Generally, women are easy to please. But don’t give her corals that you picked up from the seashore if you’re still in the courting stage and still unsure of how she feels for you. It’s either she’ll throw it away when you’re not looking or she’ll forever remember you as a cheapskate. Generally, men would think giving cute things like stuffed toys to girls during the first stages of the relationship is not a problem – wrong. Unless the girls you’re courting are as young as your baby sisters, stuffed toys would be sweet. But for women who are mature enough to buy themselves a car and pay their own rent, guys might need to exert a little creativity (or funds) in giving gifts.   

Girlfriend 
      Flowers and sweets like candies and chocolates are still very much appreciated. In fact, these things are advisable because it should remind them of the time when you’re still courting. But this time, the price won’t matter you can give her flowers that you personally picked from your mom’s garden or a variety of wholesale candy. But don’t just give them generic-looking candies. Of course men should still need to exert a little effort in finding the sweets that would best signify the occasion. There are candies that are usually made especially for V-day – these candies, usually red and heart-shaped, come in special packages. Giving them sweets that went straight out from the stores could mean they’ve become less special than they did back when they’re still being courted. Yes, girls can be that emotional.
 
Wife
      For some men, their wives are probably the hardest people to gift primarily because they think they’ve already given everything to them. But this type of reasoning should be left to those who want to be corny on Valentine’s.  

Wives could be the hardest people to give a gift too, yet they’re supposed to be the easiest. Men usually have a hard time because they only think of what else they haven’t given their wives. And more often than not, giving their wives one simple thing – which is their time – doesn’t cross their mind. Quality time can be done from a simple walk in the park or an extravagant romantic getaway in the Caribbean. For married couples, expensive material things should no longer matter. It’s each other’s company that’s valuable.  

There is no better gift couples can give each other but a time to reconnect and rekindle their love for each other. Some men might have given their wives all the luxury there is, but still, there’s no better way to make a woman feel special that to remind her that she is the only thing that matters.

Red Velvet Cake Recipe

Just in time For Valentine's Day! Here is a yummy and easy red velvet cake recipe.

Red Velvet Cake

Ingredients:

For the Cake -
1/2 cup shortening
1 1/2 cup sugar
2 eggs
1 tsp vanilla
1 tsp butter flavor
1 tsp vinegar
1 tsp soda
3 tbsp cocoa
2 1/2 cup sifted cake flour or 2 1/2 cup all purpose flour sifted, less 5 tbsp
1 cup buttermilk
1 tsp salt
1 1/2 oz bottle of red food coloring
For the Icing -
3 tbsp flour
1/2 tsp salt
1 cup milk
1 cup shortening
1 cup sugar
2 tsp vanilla
1/2 tsp butter flavor
Instructions:
To make the cake

Cream shortening, sugar, eggs, flavors.

Make a paste of the cocoa and the food coloring; add to first mixture

Alternately add flour and buttermilk

Mix soda and vinegar in small bowl and add to batter.

Blend well. Bake in three greased and floured 9 or 10 inch cake pans for 20-25 minutes at 350

Let cool completely and cover with frosting.



To make the icing

Cook milk, flour and salt on stove top until thick, stirring constantly. Let cool.

Cream shortening and sugar very well and add flavors. Combine with first mixture, beat very well and then ice your three layer red velvet cake!
